Honey Soy Chicken Drumsticks

**Ingredients:**

- 4 boneless, skinless chicken breasts
- 1/4 cup Manuka honey (83+ MGO)
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 tablespoon olive oil
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 2 tablespoons water
- Sesame seeds and chopped green onions for garnish
- Cooked brown rice for serving

**Instructions:**

1. **Marinate the Chicken:**
- In a bowl, combine Manuka honey, soy sauce, minced garlic, grated ginger, olive oil, sesame oil, and rice vinegar. This flavorful mix will be your marinade.
- Place the chicken breasts in a shallow dish and pour half of the marinade over them. Ensure the chicken is well-coated. Save the remaining marinade for later.
- Cover the dish and let the chicken marinate in the refrigerator for at least 30 minutes.

2. **Cook the Chicken:**
- Preheat the oven to 375°F (190°C).
- Heat a large oven-safe skillet over medium-high heat. Add a bit of oil if needed.
- Remove the chicken from the marinade (reserve the marinade) and sear it on both sides until golden brown (about 2-3 minutes per side).

3. **Bake in the Oven:**
- Pour the reserved marinade over the seared chicken.
- Transfer the skillet to the preheated oven and bake for about 20-25 minutes or until the chicken is cooked through, basting the chicken with the sauce halfway through.

4. **Thicken the Sauce:**
- In a small bowl, mix cornstarch with water to create a slurry.
- Transfer the skillet back to the stovetop and bring the sauce to a simmer.
- Stir in the cornstarch slurry and cook until the sauce thickens.

5. **Serve:**
- Remove the chicken from the oven and let it rest for a few minutes.
- Slice the chicken and drizzle the thickened sauce over it.
- Garnish with sesame seeds and chopped green onions.
- Serve over cooked brown rice.
